Impact of Kitchen Labor Saving Equipment on Food Production in 5 Star Rated Hotels in Nairobi County, Kenya.

The hospitality sector is labor intensive and therefore there is need to employ labor saving equipment. Labor saving costs may only contribute to a small percentage of staff turnovers, but reducing them can directly increase revenue without the need to increase sales. Money saved on labor may go straight to the bottom line which may make a business more competitive (Kaur & Mehrotra 2004). Therefore, the absence of kitchen labor saving equipment may frustrate the hotel industry by raising its operational costs of production hence reducing the profits of an organization. The current study therefore sought to investigate the impact of kitchen labor equipment on the various methods of food productions in five star hotels in Nairobi country, Kenya and specifically sought to establish the types of kitchen labor equipment used. This would help find out whether the hospitality industry has employed efficient labor saving equipment and further determine their importance. Finally the study examined if there was a relationship between kitchen labor saving equipment and the various methods of food production. The researcher used descriptive survey design using both qualitative and quantitative approach. A sample population of respondents was selected through simple sampling, comprising of kitchen staff, chef and the management of the 5 star-rated hotels. The validity of the data collection instruments was ascertained by reviewing the questionnaires. Data collected was then coded and entered into a computer and subjected to statistical analysis and the results were presented in the form of tables and carts. The finding of the study showed that the main kitchen saving equipment used in the hotels are mechanical with 50% followed by electronically by 30% and finally large equipment by 20%. Less staff was also needed in the hotels that had more labor saving equipment where delays of work were also reported to be eliminated. Therefore in conclusion, hotels highly need labor saving equipment for effective and efficient of production unit. Finally, the study recommended that five star hotels should use labor saving equipment to maintain consistency, cut down on cost of production and save time for various competitive advantages.
